Wine:
The 2015 White Burgundy is an exceptional, fully mature Chardonnay. It reveals a lovely ripeness balanced by refreshing acidity, with floral aromas in the forefront and supported by a chalky minerality. On the palate, it is full and expansive, offering a generous, well-integrated texture. There’s a refined hint of bitterness, and while it can age gracefully for another 2 to 3 years, it’s ready to enjoy now with freshwater fish, a salmon terrine, or cod in beurre blanc. A Selection Committee Favorite, rated 92/100.Vinification:
Hand-harvested, malolactic fermentation carried out in full.80% of the harvest matured in demi-muids and the remaining 20% in 228-litre barrels.
