The Chablis Vénérables Vieilles Vignes (old vines) 2006 is the figurehead of the wide range of Chablis. Of such consistency, that this alone tells us the profile of the vintage. In 2009, the wine is sharp and incisive on the palate, stamped with a strong minerality. The aromas are prominent and typical with honeyed, iodine notes. Metronome and a model example, this is a wine of exceptional quality.Vinification:
Cold static settling before fermentation starts. Alcoholic and malolactic fermentation in tank. Aging: a period of 14 months on fine lees, in tank and small cask.Color:
Pale golden colour with green highlights, it catches the light incredibly well. Clear, bright wine.Nose:
Half open on the nose, very pure showing a first array of fresh citrus aromas. After aeration, a fine mineral power comes through and continues with a very complex vegetal, fruity note. Ripe and fresh fruit complete the picture. Lasts well over time. All the purity and depth of Chablis can already be found on the nose.Palate:
Remarkable on entry with freshness and tautness, and beautiful body marked by a pure expression of fairly succulent fruit. The finish is very long, almost endless.
