Wine:

The 2022 Red Terre des Clos Coteaux Champenois reveals bright, precise flavours of morello cherry and juicy red berries, underpinned by a subtle touch of oak that introduces delicate hints of spice and balsamic complexity. The fine-grained tannins provide structure and poise, while the wine's balanced acidity keeps it fresh and vibrant. With its refined texture and lingering red fruit flavours, this is a rare and expertly crafted expression of the terroir, selected as a favourite by Olivier Poussier, Best Sommelier in the World.

Vinification:

Hand-harvested from a small, meticulously tended parcel in the Ardre Valley (Terres des Clos), this wine is crafted from grapes specifically cultivated for red wine production. The process includes destemming, gentle punching down at the start of fermentation, separation of free-run and press juice, followed by a three-week maceration. The wine is then aged for 14 months in barrels, resulting in a refined and carefully balanced expression of its terroir.

Temperature:

Serve between 16 and 18°C.

Roast Bresse poultry or guinea fowl, well-matured Galician prime rib, sweetbreads with new carrots, just-seared red tuna or in a red wine matelote, turbot served with risotto and a simple veal jus.
