Vinification:

Harvested by hand. Vinification in concrete vats for all three grape varieties. Matured for 18 months in small concrete vats for the Grenache and Mourvèdre, 6 months in concrete vats and 12 months in barrels for the Syrah.
Certified organic wine.

Color:

Intense red with carmine highlights.

Nose:

Intense aromas of blackberries and plums underlined by floral notes of violets and peppery herbs.

Palate:

Round and fruity, this Vacqueyras cuvée offers ripe tannins and a rich, velvety texture.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Roast pigeon, duck aiguillettes with figs, venison medallion and reduced jus, roast cauliflower with spices.
