Predominantly Syrah, the 2021 red IGP Pays d’Hérault Gualibaou du Russe is a barrel-aged wine that delivers pure, concentrated fruit with notes of black fruits, leather, and cocoa. This wine requires patience to fully appreciate, as it has a rich structure and firm tannins, yet maintains a fresh and appealing profile. It is a wine to be discovered over the next 6 to 8 years, distinctly marked by its Languedoc terroir, with subtle smoky flavors on the finish. Rated 94/100 by the Selection Committee.Vinification:
Hand harvested. Independent vinification for each grape variety using indigenous yeasts. Vatting for 20 to 30 days. Aged for 24 months in 1-, 2- and 3-wine oak barrels. Blending of the 3 varietals, 2 months before bottling. No filtration.Color:

A native of the region, Pierre Vaïsse has been established since 2007 in the Aniane area, at the heart of the Terrasses du Larzac. Today, he is a recognized and appreciated figure among wine enthusiasts, following in the tradition of farmer-winemakers.
His organically cultivated vineyard, painstakingly built over the years, now spans 18 hectares on the pebbles, clays, and limestones of the area. Inspired by his friends Laurent Vaillé (La Grange des Pères) and Frédéric Pourtalié (Moncalmès), Pierre Vaïsse produces deep wines that combine body and smoothness, with velvety, creamy textures enhanced by long aging processes.
