Wine:

Freshly bottled and available as a pre-release on our site, the 2018 Côtes du Jura Vin Jaune reveals an intense aromatic profile. Expect notes of spices, curry, fresh walnuts, dried porcini mushrooms, and even a hint of liquorice—Savagnin at its purest, showcasing perfectly controlled oxidative nuances, refined ageing, and a touch of warmth. Its natural richness delivers impressive volume on the palate while maintaining remarkable freshness and vibrancy. This is a dense, pure, and energetic wine, shaped by gentle natural oxidation that gives it an endless finish. A true favourite! For optimal enjoyment, decant several hours or even a full day in advance if opening soon. With an ageing potential of 30 years or more, it’s a treasure for collectors. Pair it simply with 24-month-aged Beaufort, a chicory gratin with Comté, escargots, or a classic poularde aux morilles from Franche-Comté. A standout selection from the Selection Committee, rated an outstanding 96–97/100!

Vinification:

Hand-harvested. Fermentation with indigenous yeasts. Aged for six years in oak barrels in dry cellars (historic underground cellars with natural stone). Bottled on 16 January 2025.

From the "Les Roussots" vineyard, with vines averaging 27 years of age, planted on clay-limestone soils with blue marl from the Lias era. Farmed according to Organic Agriculture standards since 2012, with ongoing biodynamic trials.
The estate underwent Organic Agriculture conversion from 2016 to 2018 and has been certified Organic since 2019.

This wine is in the process of conversion to Organic Agriculture.

Brilliant buttercup yellow.

Nose:

A powerful, spicy aroma reminiscent of curry, fresh walnuts, dried porcini mushrooms and even liquorice.

Palate:

Rich, fresh, and vibrant all at once, this cuvée delivers a dense, pure wine with remarkable energy. Its gentle, natural oxidation enhances the experience, providing a finish of extraordinary length. A true favourite!

Temperature:

Decant several hours, or even a day, in advance if served within the next few months, before serving at 16°C.

Food and wine pairing:

Ideal with endives au gratin with Comté cheese, poularde with creamy morel mushrooms and Vin Jaune, mushroom croustade, American-style lobster, snails, shellfish, lake and river fish, cheeses: Comté, Beaufort d'alpage minimum 24 months.

Cellar aging:

From now until 2054, or even longer for enthusiasts.
